GLUTEN-FREE APPLE SANDWICHES


INGREDIENTS

  • 2 small apples, cored and cut into 1/2-inch thick rounds
  • 1 teaspoon lemon juice to prevent browning
  • 3 tablespoons peanut, cashew, or almond butter
  • 2 tablespoons semisweet chocolate chips
  • 3 tablespoons gluten-free granola


INSTRUCTIONS

  1. If not eating right away, use lemon juice on each cut side of the apple
  2. Spread one side of half of the apple slices with peanut, cashew or almond butter
  3. Sprinkle with chocolate chips and granola
  4. Top with remaining apple slices, pressing down gently to make the sandwiches.

NOTES
You can use toppings to personalize these for your family!
